Puff pastries are comforting, fun to make, and an ideal fall lunch with a hot soup or salad.
Here is a recipe for delicious vegetarian queso blanco puffs that you can adapt according to the vegetables you have on hand.
Ingredients for 8 puff pastries:
- 250g Queso Blanco (half the cheese made with 4L of milk)
- 1 cup grated mozzarella cheese or 8 slices of fresh mozzarella
- drizzle of vegetable oil of your choice
- 1/2 white onion, cubed
- 1/2 green bell pepper cut into cubes
- 1 zucchini cut into small cubes
- 1 stalk of celery, chopped
- 4 chopped white mushrooms
- 2-3 minced garlic cloves (to taste)
- 1 handful of spinach
- 1 handful of chopped fresh basil or 2 tbsp. tablespoons fresh pesto
- salt and pepper to taste
(The vegetables above can be changed depending on what you have on hand: asparagus, leeks, shallots, eggplant, etc.)
- 1 handful of flour of your choice
- Sufficient puff pastry for 8 small puff pastries
- an egg yolk
- 1 C. milk
Recipe :
1 - In a frying pan, heat the vegetable oil over medium heat. Add the onion, bell pepper, zucchini and celery. Cook 5 min.
2 - Add the mushrooms and garlic. Mix and cook 2 min.
3 - Add the spinach and chopped fresh basil. (if using fresh pesto, do not add it). Cook 2 minutes or until spinach is soft. Remove from fire.
5 - Preheat the oven to 375°F
4 - Flour a work surface. Using a rolling pin, roll out the puff pastry into a large rectangle.
5 - Using a knife, trace and cut the rectangle into 8 small squares.
6 - On each square of puff pastry, if you are using fresh pesto, spread 1/4 c. tea. Then, in the center of the square, place 1 to 2 tbsp. queso blanco.
7 - On top, add 1 to 2 tbsp. tablespoon vegetables prepared previously. Then, sprinkle the grated mozzarella cheese or place a slice of fresh mozzarella.
8 - Moisten your fingers with water then fold the four corners of each puff pastry and unite them in the center by applying sufficient pressure to attach them.
9 - Put a sheet of parchment paper on a baking sheet. Place the 8 puff pastries on the baking sheet.
10 - Whisk the egg yolk and the milk, then brush the pastries.
11 - Bake the puff pastries for 25 minutes or until the puff pastry is golden brown.
12 - Notice that Halloween or the "Dia de los muertos" is soon upon us even in our puff pastry.
