Recipe for magic bread with magic whey
If you haven't had a chance to make delicious homemade cheese yet and you're wondering what whey is:
Whey is the liquid part that comes from the coagulation of milk in the cheese making process. Here is what it looks like:
It is a greenish-yellow liquid that is composed mainly of water, but also lactose, proteins, vitamins, minerals and very little fat. A bread made with whey is an even healthier bread!
Ingredients:
1/2 liter of lukewarm whey 20 grams of baker's yeast 3 cups unbleached all-purpose flour 2 teaspoons fine salt 2 tablespoons oil (canola, olive, etc.)
Recipe:
In a large bowl, dilute the baker's yeast in the lukewarm whey for 5-10 minutes. Add flour, salt and mix well. The batter will be almost runny.
Sprinkle the dough with flour, cover it and let it rest for 1h30. Be careful, it will double or triple in size so make sure you have a big enough bowl!
After 1h30, the dough will be spongy. Preheat your oven to 475ºF and put a small baking sheet in it with a little water.
On another baking sheet, put a little oil and pour the dough on it. Pour it all at once for a large loaf or divide it for several small loaves.
Sprinkle the dough with flour and bake your bread for 25 to 30 minutes.
And There you go! You have made a wonderful whey bread! No more waste! :)
