Recipe for pink pancakes with beets:

Ingredients for 4 persons :

For the pancakes:

- 1 grated beetroot
- 2 eggs
- 2 cups all-purpose flour
- 2 1/2 cups of milk or whey
- butter

For the beet salad:

- 1 grated beetroot
- 1/2 onion cut into small cubes
- 1 tomato cut into small cubes
- a drizzle of olive oil
- a drizzle of balsamic vinegar
- salt and pepper
- 1/4 cup homemade ricotta cheese

For the eggs:

- 1 or 2 eggs per person prepared to taste

Instructions :

For the pancakes:

- Beat the eggs, add the milk and gradually incorporate the flour.
- Add the beetroot to the mixture. Pancakes will turn pink.
- In a frying pan, heat a little butter over medium heat, then pour in a ladle of the mixture. Cook the crepe on both sides until golden brown. Remove the pancake from the heat and keep it between two plates to retain the heat.
- Repeat until there is no more pancake mix.

For the beet salad:

- Mix the beetroot, onion and tomato. Add the drizzle of olive oil and balsamic vinegar, salt and pepper and mix.

To serve :

- On each crepe place the eggs, then the beetroot salad in the center with a little homemade ricotta on top.
