Recipe: Mexican Quesadillas

The days are getting shorter, we invite the sun into your kitchen with this delicious, simple and quick recipe for Mexican quesadillas!

Ingredients for 4 servings:

- 8 tortillas
- 250 gr (or half) of your mozzarella made with 4L cut into slices.
- 8 thin slices of ham (if desired - you will make sincronizadas this way)

Garnish of your choice and to taste:

- Slices of a very ripe avocado
- 1/4 onion finely chopped
- 1 tomato, diced
- slices of pickled jalapeños
- chipotle salsa
- a handful of finely chopped cilantro
- 4 sliced ​​zucchini flowers (flores de calabaza)


1. In a large skillet or "comal", over medium heat, quickly heat 4 tortillas, turning them sideways.
2. Still on the heat, spread over the 4 tortillas 1/4 of the mozzarella, 1 thin slice of ham and again spread 1/4 of the mozzarella. Here you can also add half of the slices of the zucchini flowers.
3. Fold the 4 tortillas in half so that the contents remain inside. Toast the tortillas and turn them aside, until the cheese is melted
4. Remove from heat. To preserve their heat, keep them between two plates while you repeat steps 1 to 3 with the other half of the ingredients.
5. Serve and place the garnishes in the center of the table so that everyone can help themselves to taste.
