So it's the perfect season to explore and create delicious new recipes and this one will definitely become a new tradition.

Recipe: Homemade feta cheese and blueberry salad

Here, we used our homemade feta made from 3L of cow's milk and 1L of goat's milk (a killer!).
If you were in doubt about making homemade feta cheese... don't doubt it because in a salad during the summer, it's a real treat! This cheese has much more flavor and the texture is more pleasant than that of an industrial feta.

Ingredients :

as a side dish for 4 people or as a light meal for 2 people:

Salad :

- 200g homemade feta cheese
- 1 large tomato cut into large cubes
- 1/2 cucumber cut into thick slices, then into 4.
- slices of 1/4 white onion, thinly sliced
- 1 handful of chopped fresh cilantro
- about 100g of blueberries
- 1 handful of baby spinach
- salt and pepper to taste
Optional: addition of nuts of your choice (raw cashews, sunflower seeds, sliced ​​almonds)

Dressings:

2 to choose from:

1 - Olive oil and balsamic:

Traditional:
- 1/4 cup of olive oil
- 1 C. balsamic vinegar

2 - Creamy

Tart and slightly sweet:
- 1/4 cup of olive oil
- 1 C. tablespoon apple cider vinegar
- 1/2 tsp. mayonnaise
- 1/2 tsp. dijon mustard
- 1 C. honey

Preparation :

In a large bowl, combine all the salad ingredients.
In a mason jar, prepare the vinaigrette of your choice. Add all the ingredients, close and mix vigorously, until the consistency is uniform.
Serve salad on plates and add dressing to taste.
