Our kits can be stored at room temperature and all ingredients have a shelf life of at least one year for best results.

Bacterial cultures, included in three of our kits, should be kept in the freezer to extend their life.

Use the two sachets of bacterial cultures together to make 10 x 500g cheeses.*

Including:

  • 1 sachet of mesophilic type II bacterial cultures

  • 1 sachet of mesophilic type III bacterial cultures

Bacterial cultures have several functions when making cheese. Indeed, they make it possible to acidify the milk naturally and prepare it for the addition of rennet. In addition, they are essential for the ripening of the cheese and for it to develop a delicious taste. They are also useful for obtaining the much-desired "squick" when making cheese curds.

These bacterial cultures are developed and produced locally in Quebec by a specialized laboratory.

We opted for these bacterial cultures specifically for our cheese curds recipe because they give a succulent result that "squicks" to the bite.

It's much more economical, healthier, tastier and much more rewarding than eating industrial cheese bought at the supermarket!

- Conservation

Our kits keep cool and dry and the ingredients last for over a year.

To prolong the life of the bacterial cultures, they must be frozen or refrigerated upon receipt of the order.

They can spend ten days at room temperature without being affected. Heat will reduce their effectiveness gradually, but will not make them bad.

Once made, the cheeses can be kept for an average of one week in the refrigerator.
