Recipe: Easter Chocolate, Raspberry & Mascarpone Parfaits

A simple, fresh dessert that’s perfect for Easter. The crunch of graham crackers, the smooth vanilla mascarpone cream, the freshness of raspberries, and chocolate… an ideal combination for the beginning of spring!

Recipe: Easter Chocolate, Raspberry & Mascarpone Parfaits


Ingredients (4–6 parfaits)

Vanilla Mascarpone Cream

  • 1 cup homemade mascarpone
  • ¼ cup heavy cream (35%)
  • 3 or 4 tbsp sugar (to taste)
  • 1 tsp vanilla extract

(If your homemade mascarpone is already light - for example, a version made with milk and cream - you can reduce the amount of heavy cream.)

Assembly

  • 1 cup crushed graham crackers (about 6–8 crackers)
  • 1 cup fresh raspberries
  • ⅓ cup dark chocolate shavings (or to taste)

Preparation

1. Prepare the mascarpone cream

In a bowl, combine the mascarpone, cream, sugar, and vanilla.
Whisk lightly until smooth and creamy.


2. Prepare the chocolate

Using a vegetable peeler, shave thin curls of dark chocolate from a chocolate bar.


3. Assemble the parfaits

In each glass, layer the following:

  • crushed graham crackers
  • vanilla mascarpone cream
  • fresh raspberries
  • another layer of mascarpone cream
  • chocolate shavings

4. Chill

Refrigerate the parfaits for 30 to 60 minutes before serving.


Suggestion:
Add a few raspberries and extra chocolate on top for an even more festive presentation.
